Flank Steak
Flank steak is often marinated, one of our favorites is to make it into steak fajitas.

Steak Fajitas
Steak Fajitas are one of Kaleb's favorites. The marinade requires a little planning ahead, but well worth it!

Prime Rib Roast
Rib steaks or a prime rib roast can be a tough decision, but when it comes to the holidays, a Prime Rib is tough to beat! Plus, with something as delicious as a prime rib, very few side dishes are needed compared to other main dishes. This prime rib came from a four year old dry cow we fed out, and was just as amazing as a yearling, the genetics are there to marble!

Beef Stew
This beef stew recipe This recipe calls for sirloin steak, but stew meat works just fine. However, I recommend allowing the soup to simmer 20 minutes or longer to ensure the connective tissue in the stew meat has time to tenderize. I typically use 2 cans of condensed tomato soup (no French Onion soup) and rather than frozen vegetables add chunks of potatoes, onions, and carrots and allow it to boil until the vegetables are tender. In the final five minutes or so, I like to add frozen peas and to serve, sprinkle parsley on for some color. The Worcestershire sauce provides some good flavor and a little additional garlic salt and pepper is good as well.

Cube Steak
On it's way to becoming the Marlboro Man Sandwich....

Marlboro Man Sandwich
This Pioneer Woman recipe is a great way to use cube steak that makes for a tasty sandwich. If the meat is still slightly frozen, it's easier to slice into thinner, more desirable slices.

Slow Cooker Drip Beef Sandwiches
This Pioneer Woman recipe for Slow-Cooker Drip Beef Sandwiches couldn't be easier or tastier! I seldom use the rosemary or cheese slices, and it's still simple and delicious, just make sure to toast the buns for a little extra pizazz! Roasts do best with long cooking temperatures so this is a perfect recipe for roasts.

Slow cooker recipes are a favorite for the ability to prep food early and then let it cook throughout the day. In this recipe, I skipped the mushrooms but did add in a bit of sour cream right before serving. Dinner worked out to about $1.95/serving on the main dish or $2.50/person with sides of broccoli and cantaloupe.

Burgers and Fries
While burgers are a pretty standard fare, adding sweet potato fries on the side makes it even better (and with some added nutrition too!)

A recent dinner of quarter pound burgers and fries came to $2.69/serving, much better in taste, value, and nutrition than anywhere we could eat out!
Freezer Beef
Beef is sold by the half or whole once/year, typically available in February (maximize your tax refund and fill the freezer!) Cattle are Angus and have been selected for carcass quality. They are raised on grass for typically 18 months before being placed on a finishing ration the last 90 - 120 days before being processed locally.

With a half or whole beef, you receive all the cuts from the animal, from T-Bones and Rib steaks, to burger, roasts, stew meat, and even dog bones for your pets (if you wish). You also can specify your desired processing, whether that is 1 or 2 pound packages of burger, 1" or 2" thick steaks, etc.
